Healthy Eating Habits

Well, I’m saying it. Actually mine is a continuation of a clean eating diet I started about 6 months ago. Since I’ve been doing this, I’ve lost a bit of weight and I feel a lot better. But there are times when I do miss a good fast food burger and fries. And the good thing is I can still have a burger and fries – use leaner ground beef and oven bake your fries. Still pretty delish
I love, love Quiche and to my surprise one of the recipes was Quiche. Here’s the recipe.
Mini Spinach, Pepper, and Cheese Quiché
- Preheat oven to 350° F
- Coat 4 muffin cups with avocado oil or cupcake liners
- Heat avocado oil in skillet over medium-high heat. Add the bell pepper and spinach and cook until pepper is soft and spinach is wilted, about 4 minutes. Stir frequently. Transfer mixture to colander to drain excess liquid
- In a bowl, combine the eggs, spinach-bell pepper mixture, cheese, salt, and pepper; then pour into prepared muffin tin
- Bake for 15 minutes or until set. Cool in muffin tin on wire rack for about 5 minutes
Prep Time: 10 minutes. Cooking Time 15 minutes + 5 minutes to cool
